Thai Coconut Chicken Soup

We don't tend to put much faith in Costco frozen foods in general, but this one was a surprise. I had read the soup may need some additions in terms of vegetables, chicken and spice. We made two large Costco packs for 4 people. In addition we made turmeric rice with carrots and peas and poured the soup over the top. It was surprisingly tasty and delicious and perfect with the rice and especially the peas, which helped make it. Even our kids who don't tend to like a lot of Costco foods were commenting on how good it was. It's filling and has the consistency of gravy so perfect for pouring over the rice. The downside, we all got a terrible case of gas and bloating that disrupted sleep for all of us individually. As yesterday was a snow day and we were stuck inside we didn't tend to eat much, so it was clearly a result from the soup. We cook heavily with onions and garlic, so I'm not certain it was from that or potentially the Xanthan for thickening. The question is, will we try it again since it is so good? Probably, but maybe smaller portion sizes.

I bought one pouch of this soup on a whim, and it was so good that I went back to Target and got the rest of them on the Shelf. This soup is so satisfying with perfect flavor, and no guilt. Warm up, salt to taste and eat.

I just finished eating an entire pouch and scraped the bowl to not miss a single drop. I could eat this on frequent repeat. The chicken is perfectly tender and the entire soup is so flavorful. Thank you for creating such amazing meals!

Found this soup at Costco and thought I would give it a try with it being paleo, low sugar and calories. I have eaten it for 4 meals in the last week. It is absolutely delicious. Definitely the best store bought soup I have ever had. It is rich in flavor, filling and nutritious. Thank you!

I eat this soup at least twice a week.
Low sugar content, fresh ingredients, different than the boring chicken noodle soup from competitors.
I just purchased the cilantro lime chicken entree, can't wait to try it!

I am all about trying new soups. I make soups often at home and my husband likes to joke that I should sell my soups:) I'm that person that ask for a sample soup b/c I don't want them to waste their soup dumping it into the garbage...which is where most restaurant soups belong;) This soup is fantastic! 10 out 10 for flavor! It's absolutely perfect and I'm so glad our Target carries it. Thank you Kevin for making awesome products! I buy their other products as well and find them to be delicious.

One of the best soups I've ever had! I add shitake mushrooms sometimes or some lime and chili flakes. Tastes homemade! Thank You Kevin! Added kale this time!

YALL!!! I tried this soup for the first time about 6 months ago and I think about it literally everyday. I loveeee Thai food so I was excited to try this soup, but had no idea this would come to be the best thing I’ve ever tasted. I went into it not having high expectations because a lot of store bought curry sauces/soups are not great, but this is PHENOMENAL. I bought it at Costco and sadly no longer have a Costco membership, BUT I think I can buy at target (hence why I came to the site).

I will buy out their whole section.

Now I’m also going to try your other products because the soup was so amazing.

This soup was one of the best soups I've ever had. I added a little salt, lime, and rice and it completely took it to another level. The flavors that developed were restaurant quality. I would 100% buy this again. Best Kevin's product I've had so far!

My husband loves this soup but it no longer seems to be available at our local markets. Is there another way to buy it
